So I was trying to explain Hope's powers to my buddy and he says that sounds just like Mimic. To which I replied "Damn, you're right." Can anyone give me a decent break down of the similarities and differances between their powers?

We don't really have enough information on Hope's abilities to be fair. Mimic imprinted the power of the original five X-Men permanently. Hope's mimicry is temporary and can make her pass out. We don't know if there's the chance that she can take the power permanently or not yet. Also, Mimic takes the power at a lesser level than the person he's mimicking, whilst Hope seems to take on their power at a comparative level.

Wasn't the 616 Mimic's power involuntary in the beginning.  While Hope's are under her control.
Nothing truly goes away - it just get lost for a little while

Only Exiles' Mimic takes 50% of the original's power levels -- 616 Mimic takes the full alottment.
 
616 Mimic used to spontaneously mimic any mutants in his range, but recent stories (including this week's X-Men Legacy) suggest he no longer MUST mimic anyone nearby.
Charisma: the fine line between winning them over with charm and ruling them by fear.
